My dear husband came in from the farm the other day with this......
and these.....
which inspired a strawberry rhubarb pastry. His favorite dessert.
I cannot take credit for this, because the only thing that I did to help with it was eat it. But I will share the recipe so that you, too, can make this super yummy dessert.
Strawberry Rhubarb Pastry
First of all, take 1 1/2 cups of flour
1/2 cup of sugar
2 eggs
and 1/2 cup butter or margarine.
Cut in the butter and mix it all together. Press in the bottom of a 9X13 pan.
Next, prepare the rhubarb and strawberries by rinsing and cutting them.
Stir together the rhubarb, strawberries, (about 1 quart)
and 1 (3 ounce) box of strawberry or raspberry Jello, and put on top of the crust.
Then you will make a crumb topping by mixing 1 cup of flour and 1 cup of sugar and cutting in 1/4 cup of butter. Sprinkle on top.
I am going to make this! Can you tell me a little more about rhubarb? I have always hesitated to bake with it myself, because I know there is a certain part of the rhubarb you are not supposed to eat? Maybe I heard wrong, but that has alway made me leary to use it, even though I love eating it in pies! Yummy!! So let me know. Love your blog!

Victoria, the stems are good to eat. The leaves have a poison in them, but you would have to eat like 15 pounds of them to get a fatal dose. So, really there are no worries. Let me know how your pastry turns out!

That looks soooooo yummy! I think I'm going to have to make a trip to the farm. There's more rhubarb over there, right?! Way to go Jim! It's a bummer my mom quit making all that yummy stuff.

ReplyDeleteCal- I'm not sure if you can get rhubarb in the grocery stores. You might be able to this time of year. I just grow it in my garden. It is quite tart, which makes the dessert especially good since it is mixed with sweet strawberries.

Oh YUMMY!!! I haven't had that in years. Mom never made it with strawberries in it did she? Oh, but that looks way too good. I am seriously drooling over here. Send some my way! It is funny, I have been dreaming (Craving more like) of rhubarb pastry the last couple of weeks. And actually thinking, would rhubarb grow in pots on my balcony? Not sure, but how yummy would that be...if the balcony wasn't already overcrowded?

We do not get rhubarb in Greece but I've heard so many lovely things about it and it's the first time I see a picture of the plant. I tasted a rhubarb syrup which was delicious, so I can guess that this should really be awesome.
