For any of you who don't know......I'M A HUGE PAULA DEEN FAN! Well, I was talking with my friend Sara the other day, and she said that she had a Paula recipe that she wanted to try. Of course I had to try it as well. These Lemon Blossoms are AMAZINGLY delicious, and easy to make. I decided to make some to take to a family party today. It turns out...I'm not the only one who thought they were AMAZINGLY delicious! Everybody loved them.
Here is the recipe, so that each of you can make and try these wonderful delicacies.
PAULA DEEN'S LEMON BLOSSOMS
1 (18.25 oz. box) yellow cake mix
1 (3.4 oz.) instant lemon flavored pudding mix (I used the cook and serve because that's what I had on hand)
4 large eggs
3/4 cup plus 3 tablespoons vegetable oil, divided
4 cups confectioners' sugar
1 tablespoon lemon zest (about 1 lemon)
1/3 cup fresh lemon juice
3 tablespoons water
Preheat oven to 350 degrees. Spray miniature muffin pans with nonstick cooking spray (I like to use the cooking spray that has flour in it. I've never had a cake or muffin stick yet). In a large bowl, combine cake mix, pudding mix, eggs, and 3/4 cup oil. Beat for 2 minutes. Spoon 1 tablespoon of the batter (I use the small Pampered Chef scoop) into each muffin tin, and bake for 12 minutes. Turn the cakes onto a cloth towel.
In a medium bowl, sift confectioners' sugar. Add lemon zest, lemon juice, remaining 3 tablespoons oil, and water, stirring until smooth. Dip the cakes into the glaze while they are still warm, covering as much of the cake as possible. Place the cakes on a wire rack with wax paper underneath to catch the drips. Let the glaze set thoroughly before storing in an airtight container.
AMAZINGLY DELICIOUS!

Just got done making these, and eating way too many! They are delicious! I felt like 12 mins was just a tad too long. I think 10 or 11 mins would be perfect. Thank you for sharing!

ReplyDeleteI made these this morning, and though they are very good, mine more resemble mini muffins & did not sink in the middle. Do you think the 12 minute bake time was too long?

ReplyDeleteIf you look at Paula Deen's actual recipe, hers don't sink in the middle either. The recipe on her site says it yields 5 dozen which is 60. Also, if yours come out looking more like muffins than flat, you may be putting too much batter in each one.

Everyone i know always is asking them for them as their birthday presents or christmas presents and or potlucks. they are soo good and soo addicting. what is nice about these is that you can freeze them and they taste so fresh right from the freezer.They don't freeze really hard. it a defenite thing to try.. i don't use yellow cake mix though. i use lemon cake mix. yuuuummmmm
ReplyDeleteI have made these several times now. They are quickly becoming a favorite! I have 2 suggestions: DEFINATELY use the non cook spray with FLOUR it, and cook closer to 10 min. I use 1 tbs and they do not sink in the middle. I get about 55
ReplyDeleteI decided to make these today & WOW are they a big hit!! Took about 20 down to my daughter's home. The kids ate all but three of them! My husband really loves them as well! I did bake them for 10 mins & made sure to use the cooking spray with the flour. They came out of the pan beautifully. I have a strong feeling these will a family recipe to make again & again! ReplyDeleteI guess I am the only person who filled them too full and only cooked them for 10 min. They definitely come out of the pan better when they are fully done and haven't spread over the top of the pan. Beware.
